mexican hot chocolate.

we have a Mexican dinner every December 23rd for a fun "Feliz Navidad" night (basically a great excuse to have some of my favorite foods!)  this delicious hot cocoa has become part of our tradition, along with serving either fish tacos or sweet pork salad.

mexican hot chocolate: serves 8.
1 C. hot cocoa mix
2 C. boiling water
dash of ground nutmeg
1/2 tsp. cinnamon
6 C. milk
2 tsp. vanilla
whipped cream
chocolate syrup

1) combine cocoa and water in pan; bring to a boil and reduce heat, cooking 2 minutes.  

2) add nutmeg, cinnamon, and milk and simmer for 5 minutes.  whisk in vanilla. 

3) top with whipped cream, a sprinkle of cinnamon and some chocolate syrup.  

enjoy and drink every last drop!!!!
