This is our traditional breakfast with cinnamon rolls every Christmas morning! I also love to serve this for baby shower and bridal shower brunch. I always get asked for the recipe.
breakfast casserole: serves 8.
10 eggs
2 1/4 C. milk
1 1/2 tsp. dry mustard
1/2 tsp. salt
1 lb. sausage, cooked and drained
2 C. cubed bread (Texas Toast or other white bread is best)
1 1/2 C. shredded cheese
1/2 red pepper, diced
2 C. spinach, rough chopped
mushroom, rough chopped (enough as desired)
1) Beat eggs, milk, mustard and salt.
2) Stir in sausage, cheese, peppers, spinach, mushrooms and bread. Pour into greased 9x13" casserole dish. Cover and refrigerate overnight.
3) Remove from refrigerator 30 minutes prior to cooking. Bake at 350 degrees for 40-50 minutes or until toothpick inserted in the center comes clean. Let stand 10 minutes prior to serving.
