a very healthy and frugal alternative to hamburger for taco filling.
taco lentils: serves 6-8.
1 onion, chopped
1 tsp. minced garlic
1 tsp. olive oil
1 C. dry lentils, rinsed well
1 T. chili powder
2 tsp. cumin
1 tsp. oregano
14 oz. water
2 tsp. chicken bouillon
1 C. salsa
1) put everything into crockpot and cook on low 6-8 hours!
2) serve just as you would in tacos or taco salad with all of the fixings. also great in quesadillas and nachos.
NOTES:
* can be combined with any beans, mixed half and half with meat or mixed with rice.
don't forget to lick the plate clean!
